The pumpkin drop
It's pumpkin baking season and I'm ready to drop the recipes.
Now if you don't like pumpkin-flavored food this may not be for you. However, some of these recipes are a bit wild so I suggest reading to wait and see.

Starting out strong we have pumpkin gnocchi. I'm not just talking about pumpkin-flavored pasta I am genuinely talking about pumpkin-shaped pasta. This may be a bit extreme but when I saw this on TikTok I had to try it. I've made pasta in my past but I've never attempted gnocchi which is a potato-based pasta. The recipe is quite easy and I will put the full recipe down below but basically, it's pumpkin pure flower and egg. Then comes shaping the gnocchi into mini pumpkins. This part may look tricky but let me tell you it's worth the trouble. When finished, stir fry the paste with a sweet sauce and the final product looks like Halloween on a plate.
Next comes the pumpkin bread. I mean you seriously can't go wrong with a gooey, perfectly sweet pumpkin-flavored banana bread. Half of us live for coffee with a muffin on the side. This recipe is easy for a spooky morning to sit back and relax on the couch with a cup in your hand and a muffin in your lap. I will put the recipe below as well. It's simple and delicious so take a chance on the fluff banana bread.
Oatmeal. We all know oatmeal is a simple breakfast that you make when you're rushing out the door but I'm here to spice it up. Literally, pumpkin spice oats will change the way you look at oats this Halloween. Thrill your morning bowl with a pumpkin spice warm oatmeal. The recipe will be below and let me tell you it won't disappoint your taste buds.
I know these may seem a bit extreme for pumpkin baking season but why not take some risks. I'm excited to hear if you guys take a chance on these seasonal recipes!
Pumpkin gnocchi
Gnocchi
- 2/3 cup of canned pumpkin puree
- 1/2 cup ricotta
- 1 1/4 cup flour
- 1 egg
- salt/ pepper ( to taste )

Pumpkin Bannana Bread
- 2 ripe bananas
- 2/3 cup pumpkin puree
- 1/3 cup maple syrup
- 2 eggs
- 1/4 cup almond milk
- 1stp vanilla
- 1tsp baking soda
- 1 tsp cinnamon
- chocolate chips
directions: preheat oven 350, smash bananas with a fork and add eggs and wish. Add in pumpkin puree, vanilla, almond milk and maple syrup. In a separate bowl at dry ingredients. Mix dry ingredients with the wet and add chocolate chips. Spray the loaf pan and add the mixture. Put in the oven for 45 minutes.
Pumpkin Spiced Oatmeal
- 1/2 cup pumpkin puree
- 1 cup steel-cut oats
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp allspice (optional)
- milk or water
( Microwave: put oats and milk in the microwave for the appropriate amount of time, then add pumpkin, sugar and spices! )
I am not much of a cook, but I think I need to convince my roommate to help me make some of these. The pumpkin banana bread sounds so good, and the gnocchi is so cute! I loved how you shaped them into tiny pumpkins, just adds a bit more fun to it!
ReplyDeleteAlaina, I have only tried gnocchi once and I absolutely loved it! I think having an autumn themed gnocchi is so cute! I love how they are shaped into little pumpkins. I’ll definitely have to try this out!
